Raventos i Blanc is one of Spain’s most prestigious, prodigal and profound producer of sparkling wines. So much that they led the charge and established a new appellation for Spanish Sparkling wine called Conca Del Riu Anoia. This decision was made in order to separate the boutique, quality focused producers within the Cava category from those who are of the more industrial sized and based on quantity. The regulations are much more stringent in Conca Del Riu Anoia, a small geographical area surrounding the Anoia River valley Eastern Penedes. Lees contact versus Cava is a minimum of 18 months versus nine for Cava and only indigenous grapes permitted. Vineyards must be 10-years-old and organically certified as well.

All said and moving forward, this leader is making stunning sparkling wines. Period! Absolutely stunning sparkling wine made from 40% Xarel-lo, 40% Macabeo, 20% Parellada from 40-year-old vines. Upon bringing the glass to your nose to smell, one sees the evidence of excellent attention to detail. Laden with pear, citrus and freshly cut apple tone, then buffered nicely by fine leesy notes. Polished, mouthfilling bubbles bring everything together into a package inspired by Champagne with all of its creamy gentleness.

BISOL PROSECCO 'CREDE'

Many of you know my proclivity towards despising Prosecco, most ones that I get to taste I refer to as ‘Pro-suck-o’, but when good ones are presented I am proud to champion them and Bisol is one of the producers that I highly admire. The name Crede for this cuvee refers to the prominence of clay soils with sub-soils of marine sand, which allow the wine to possess a noble wealth of zest, aromatics, fruitiness, richness, and seriousness that is virtually never seen in Prosecco.

Not only is this a beautiful wine to taste, its myriad of tiny bubbles are impressive to gawk at. Alluring scents of wildflowers, pears, apples and gently placed mineral. The texture is energetic, brisk, fruit driven and intense. Beautifully complex and while OK to go into a Bellini, it will work beautifully for light seafood dishes or as an aparativo either indoors or outdoors.

By the time this comes across your computer screen, I will be in Burgundy but the week before I will have visited this famed grower Champagne producer for the first time. Diebolt-Vallois Champagnes have been sought after in France for decades, the house pour Champagne in such prestigious venues as Le Bristol and George V, among many other of France's apex culinary and wine temples. The estate is situated in Cramant, a Grand Cru village in the Côte des Blancs, whose chalky soil makes the perfect home for chardonnay.

One of the first ever Grower Champagnes to ever be brought into the US, Diebolt-Vallois’s Prestige is 100% Chardonnay and solely from the Grand Cru village of Cramant. The vin claire is aged in old oak before being transferred to bottle to rest on its yeast. Three years comprise the blend along with a smattering of reserve wine going back to 2009. More amplified and power-laden than the estate’s classic Blanc de Blancs. Instant scents of gingerbread. Excellent "pearly" perfume. Wheat pastry, yellow apple, very flattering and arms-open with its richness and friendliness. Ample cut and minerality from the Chardonnay, prominent length and sophistication, one really sees the attention to detail on this most excellent Grand Cru. Best yet is that this bubbly is now directly imported and is one that we used to have to sell for $75.
